There is a wide variety of chocolate on the market today, with many brands containing as much as 70%,  80%, or 85% Cacao.  In fact, Xocai Chocolate also contains up to 85% Cacao.

The difference between Xocai Chocolate and the other brands of chocolate available today is the amount of flavonoids present in the finished product.  Because Xocai is produced using a patented cold-pressed process, these antioxidants are retained in the chocolate.  'Candied' chocolate is produced by the 'dutching' process (cooking), which reduces the vast majority of antioxidants available. Therefore, even though a product will contain a high percentage of cacao, it does not necessarily contain a large amount of flavonoids.

Recent studies on Cacao have concluded that best results were obtained by consuming 600-900mg of Total Flavonoids (Polyphenols), plant based antioxidants that help the body's cells resist damage by free radicals. 

Below is the packaging of a dark chocolate that contains 86% Cacao. From viewing the bottom left of the photo you will see the package states that this chocolate contains 156mg of Polyphenols per 50g serving (312mg of Polyphenols in the entire 100g  candy chocolate).  The Xocai Power Squares contain more than three times the Polyphenols (1008mg) in only 18g of chocolate!

As a general rule, the darker the chocolate, the more likely it is to offer health benefits.  Because polyphenols are found in the cocoa bean, not in the milk, cream, sugar, or other additives added to many chocolate confections, the darker the chocolate the better.  More importantly is to find chocolate products that are processed without "dutching" or alkalinization.  These processes remove a significant portion of antioxidant compounds in natural cocoa.  They should also have been cold-pressed without heat as heat can also destroy cocoa's polyphenols.  Xocai products are cold-pressed without alkalinization therefore offering increased polyphenols.
